This landmark book is an accessible and authoritative guide to the fascinating world of food.

Maria Baez Kijac is a food writer, cooking instructor, and culinary historian who spent fifteen years researching this book. She was born and raised in Quito, Ecuador. She serves as a judge for the Slow Foods Awards and was the kitchen director for the PBS series American Family Kitchen. She lives in Lincolnshire, Illinois and is a member of both ChicaGourmets! and Culinary Historians of Chicago.


The curriculum for the Illinois Institute of Art’s School of Culinary Arts is based on classical principles, emphasizing modern techniques and trends. The faculty of the culinary arts program are working professionals in the culinary industry. They offer students the expertise and knowledge needed to become true professionals in the field.



Price is $75.00 per person, for members, or $85.00 for non-members.This price includes tax and gratuity.
